With so many fun treats to make this time of year, I wanted to come up with an ice cream flavor that is festive, but also quick and easy to make. Cake batter ice cream is very easy to prepare and with one simple extra ingredient you can make it super festive for Halloween.
Halloween Funfetti Cake Batter Ice Cream
2 1/2 cups heavy cream
1 1/2 cups whole milk
1 1/4 cup funfetti cake mix (I used a Halloween funfetti cake mix)
1/3 cup sugar
1/2 tsp salt
1 tsp vanilla
1/4 cup coconut rum
black and orange sprinkles
Making the Ice Cream
In a large mixing bowl, whisk together cream, milk, cake mix, sugar, salt, vanilla and rum until thoroughly combined. Pour ice cream mixture into your ice cream maker and run the machine for about 25-30 minutes. When the ice cream is almost done churning, pour in sprinkles from the funfetti cake mix and let churn until the sprinkles are mixed throughout the ice cream. Place ice cream in the freezer to finish freezing.
After about an hour, remove ice cream from freezer, scoop and garnish with Halloween sprinkles. Enjoy!
