German Chocolate Cake Ice Cream

April 9th was the 10 year anniversary of the first date that this unicorn had with her husband who adores german chocolate cake.  So I had to make a german chocolate cake ice cream flavor to celebrate the last 10 years together.  The dark chocolate ice cream and the moist chunks of cake are not overly sweet, allowing for the richness of the coconut pecan mixture to really stand out.  I look forward to the next 10 years with Mike and enjoying these decadent ice cream creations with him!  I don’t think he minds being the taste tester for each recipe either.
German Chocolate Cake Ice Cream

German Chocolate Cake Ice Cream

The Cake
2 oz semisweet chocolate, chopped
1/4 cup heavy cream
1/4 cup butter
1/2 cup sugar
2 eggs
1/2 tsp vanilla
1 cup flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup whole milk

The Coconut Pecan Mixture
1/3 cup evaporated milk
1/4 cup light brown sugar, firmly packed
1/4 cup of butter
3/4 cup flaked coconut
1/2 cup chopped pecans

The Ice Cream
2 1/2 cups heavy cream
1 1/2 cups whole milk
8 oz dark baking chocolate, chopped
1/3 cup sugar
1/2 tsp salt
1 tsp vanilla
1/4 cup coconut rum

Baking the Cake
Preheat the oven to 350°F. Grease the bottom and sides of 8×8 inch baking dish.Combine chocolate and heavy cream in a small saucepan.  Stir the mixture over low heat until the chocolate is completely melted and combined with the cream.  Remove from heat and set aside to cool completely.Beat butter, sugar and eggs in a mixing bowl until thoroughly combined and fluffy.  Add the melted chocolate and vanilla and beat until blended.  Mix in flour, baking soda and salt.  And finally, mix in milk until thoroughly combined.Spread batter into greased baking dish and bake for about 20 minutes or until toothpick inserted into center of cake comes out clean.  Let cool completely.

Making the Coconut Pecan Mixture
In a sauce pan over medium heat, bring evaporated milk, brown sugar, and butter to a boil then remove from heat.  Stir in coconut and pecans.  Set aside to cool to completely.

Making the Ice Cream
In a small saucepan, combine 1 cup of the heavy cream with the chopped chocolate.  Stir the mixture over low heat until the chocolate is completely melted and combined with the cream.  Remove from heat and set aside to cool completely.

In a large mixing bowl, whisk together remaining cream, milk, sugar, salt, vanilla and liquor until sugar has dissolved.  Once the chocolate and cream mixture has cooled completely, whisk it into the remaining ice cream ingredients.  Pour ice cream mixture into your ice cream maker and run the machine for about 25-30 minutes or until the ice cream is formed.  Place ice cream in the freezer to finish freezing.  Once firm, mix in coconut pecan mixture and chunks of cake.  You will probably not use all of the cake so there will be leftovers for snacking.  That is always a treat!  Return to freezer.  Once firm, scoop and garnish with pecans.
