Easter Egg Ice Cream

I had too many fun ideas for ice cream this Easter and could not resist sharing the unicorn recipe for Easter Egg Ice Cream!!!

Smooth and creamy, this easter egg ice cream will impress your guests at the dessert table and I guarantee it will taste like no easter egg they have ever tried before.  The colorful rounded scoops of ice cream will remind them of a beautiful basket of easter eggs.  Eye-catching, but very simple to make!

Easter Egg Ice Cream

 

The Ice Cream
2 1/2 cups heavy cream
1 1/2 cups whole milk
2/3 cup sugar
1 tsp vanilla
1/2 tsp salt
1/4 cup coconut rum
food coloring
toasted coconut
sugar sprinkles

Making the Ice Cream
Whisk together all ice cream ingredients in a large bowl until sugar has dissolved.  Pour mixture into ice cream maker and churn for 25-30 minutes or until ice cream forms.  Place in the freezer to finish freezing.

After about an hour, remove ice cream from freezer and divide it into four equal portions to place in four separate bowls.  Color each batch of ice cream with a few drops of liquid food coloring (I used pink, purple, green and yellow, but you can use any colors you would like or more colors if you divide the ice cream even further).  Place all four ice cream colors back in the freezer for another 3 hours or overnight.

To serve, place one rounded scoop of each color on top of a bed of toasted coconut in each bowl.  Top with colorful sugar sprinkles.
